PERFECT CHOCOLATE CAKE
4 ounces unsweetened chocolate
1/2 c. milk
1 c. brown sugar, packed
1 egg yolk
2 c. cake flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1 c. superfine sugar
2 egg yolks
3 T. water
1/2 c. milk
1 tsp. vanilla
2 egg whites, whipped
Preheat oven to 350 degrees F. Grease 2 - 9 inch layer cake pans.
Whisk together chocolate, milk, allspice, brown sugar and one egg yolk in the top of a double boiler, stirring until a custard is formed and mixture thickens. Cool. Stir in baking soda and salt. Sift the flour onto waxed paper.
In bowl of electric mixer, whip the butter, gradually adding sugar and two egg yolks, one at a time, beating well after each addition.
In a cup, stir together 3 T. water, 1/2 c. milk, and 1 tsp. vanilla extract and 1 Tbsp. dark rum.
Add the flour mixture to the butter mixture alternating with the vanilla/milk/water mixture. Stir in the chocolate custard mixture and beat until smooth, approximately two to three minutes at medium speed of mixer.
In a clean bowl, using the wire whisk attachment of your electric mixer, beat two egg whites until soft peaks form; gently fold into cake batter.
Turn into greased layer cake pans. Bake at 350 degrees F. for about 25 minutes or until cake tester or toothpick inserted in center comes out clean.
Turn out onto wire racks to cool. Level with a serrated knife if required, then stack and frost with chocolate frosting.
Note: This recipe calls for superfine sugar, not to be confused with confectioners or 10X sugar. If you don't have superfine sugar you can pulse regular granulated sugar in the food processor to substitute. Domino supplies superfine sugar in 1 pound packages at the supermarket or in larger quantities at the bakery supply or foodservice outlet. Superfine sugar dissolves readily and works best for cakes, helping to produce a lighter texture.

Yes. meka easy bro.

1st you have to prepare mayonnaise.
Mewa laba ingredients. Ganan ewa venuwat daana eewa.
Olive oil ehema daanna oone namuth patta ganan.
Meva daala heduwath ewagema thama.

1 Egg yolk
1 teaspoon lime juice
1 pinch salt
1 table spoon viniger
1 teaspoon sugar
1 cup vegetable oil
1 egg white

oil hara and egg white ithiri ewa blender ekata daala beat karanna.
eeta passe oil tika tika add karanna. egg white ekath add karanna puluwan.
creamy gathiyata enakam oil tikatika add kaka kara beat karanna.
Rasa bala sugar and salt awashyaman add karanna.

In pasu vegetables ..
Cabbage
carrot
onion
letuce or ice burge
podiyata chop karala kalin heduwa myonaise eka mix karanna.

kanna pera tikak fridge eke thibboth wada hondai.:P

Yes it is easy as eating chees.

You need.

1 liter UHT or fresh milk
500 ml curd and beat well with a spoon
1 teaspoon table salt

heat milk in a pan. when it is close to boil add curd and mix well and bring it to boil.
Now you will see solid milk particles separated from water. off the flame and let it to half cool.
Stain and separate milk solids using a fine piece of cloth and squeeze nicely and hang it 2 -3 hrs to drain all water out.

then put in to a bowl and add salt slowly and mix nicely.
finally you can shape it as a ball or squire shape.

Taste and send your comments.

500g chicken ( Thigh, Drumstic or Breast with bones) cut in to large pieces.
2 tablespoon tomato sauce
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon pepper powder
1 pinch ajinomoto (Optional)
1 beaten egg
mix all ingredients with chiken and keep in the fridge (not in the freezer) for 2 hrs to marinate. if you can keep overnight is better.

get 250g normal wheat flour and add 2 table spoon corn flour and pinch turmeric powder , then mix.

Get chicken pcs and cover with flour mixture to stick nicely around the whole piece.

Finally deep fry in medium heat.

Cashew Curry

Ingredients:
250 g (8 oz) raw Cashews
3 Cups thin Coconut milk (or water)
1 medium Onion, sliced
2 fresh green Chilies, sliced
2 cloves Garlic, crushed
5 cm Cinnamon stick
4 pieces Rampe
8 Curry leaves
3 tbs Vegetable oil
1/4 tsp ground turmeric
1 tbs Raw Curry powder
2 pieces Goraka (optional)
1 Cup thick Coconut milk or fresh milk

Directions:
Place the cashews in a bowl, add boiling water, close with lid and soak for about 4 hours or overnight.
Drain the water from cashews and add salt, turmeric, raw curry powder, goraka and mix well until cashews are well coated.
Heat the oil in a medium saucepan then add onions, green chilies, crushed garlic, cinnamon and fry until onions are soft and golden brown.
Add the cashews and keep stirring until well coated with oil and onions.
Add thin coconut milk (or water), close with lid and cook on slow heat until cashews are soft and cooked.
Add the thick coconut milk (or fresh milk) and bring to a boil on slow heat.
Turn off heat. Adjust salt to taste.

LOVE RECIPES


1) Caviar Kisses

1 small cucumber, scrubbed and trimmed
1/3cup sour cream
1 tsp dried dill weed
Freshly ground black pepper - to taste
1 jar red salmon caviar
8 thin slices whole-wheat- bread
Butter or margarine

Slice cucumber into 1/4-inch rounds. In a small bowl, combine sour cream , dried dill and pepper.

Place one teaspoon of the sour cream mixture on each cucumber slice.

Garnish each with about 1/2 tsp caviar and a dill sprig.

Cut bread slices with heart- shaped cookie cutter. Toast and butter.

Place cucumber slices in center of serving plate and surround with toast hearts.

Im a medical professional in Cardiac (heart) Operation theatre .
My hobby is cooking.

Crame of mushroom soup.

50g dry mushrooms (shitake or Oyster)
1 clove garlic
small piece of ginger
1 cup Milk (UHT or fresh milk or desolved milk powder)
2 teaspoon corn flour
Pinch ajinamoto (optional)
1 tablespoon margerine
2 teaspoon chop parsly (Optional)
1/2 teaspoon pepper powder.
1/2 teaspoon salt

soak dry mushrooms for 1hr and drain. Then cut in to very small pieces.
Heat a pan add margerine , then add chopped garlic, ginger and mushroom.
fry 2minutes in medium heat. Add 2 cups water and salt cook for 05 mts.
Add milk slowly and mix well. bring it boiling .
Desolve corn flour in 1/4 cup water and add slowly till you get required thickness. add ajinamoto if need. pepper also can add this time.Off the flame
sprinkle some chop parsly over it and serve hot.

Noodles soup

Thanks for the request.

1 packet of egg noodles (Magie noodles ok)
1 cup milk
1 clove garlik
small piece of ginger
2 teaspoon corn flour
1 table spoon margerine
1/4 teaspoon salt and pepper

following items are optional...
vegetables 25g each (carrot, cabbage.fresh mushrooms, potato)
Meat or sea food ( chicken, beef , prown, fish)
Pinch ajinomoto.

Heat a pan in medium heat , add margerine and chopped garlic / ginger.
fry 1 mt.
Then add chopped vegetable and meat /fish, fry 2 mts. , add 2 cups water and salt. cook for 10 mts. add noodles cook for 2 mts.
add milk and mix wel . add ajinomoto if need.
now slowly add desolved corn flour in 1/4 cup water till you get required thickness.
Add pepper powder.

Serve hot.

Ingredients
2 cups Thick Coconut Milk
1/2 lb Brown Sugar
4 Eggs
Pinch Cardamoms (Optional)
3 Cloves (Optional)
Raisins, Cashew,

Beat the eggs in a mixer. Add the coconut milk, brown sugar
cardamoms and cloves to the beaten eggs mix well. Add the mixture into a pot
and steam for 20 minutes. Add raisins.
Altrenatively the mixture can be added into multiple small aluminum
bakimg foils and then steamed. The time required for steaming is about 5-10
minutes for this method

MALU AMBULTHIYAL

INGREDIENTS:
2 lbs Fish (Halibut, Salmon or Tuna)
10-15 pieces Goraka
1 1/2 tbs Salt
1 1/2 tbs ground black Pepper
1/4 tsp Turmeric powder
1 sprig Curry Leaves
1-2 pieces Rampe
2 pieces Cinnamon
2 cloves Garlic (crushed)
1/2 tsp roasted Curry powder
1 cup water

METHOD:
- Wash and cut the fish into 15-20 pieces.
- Place the goraka pieces in a saucepan, add a little water to cover
and simmer for about 5-10 minutes (until the goraka is soft).
- Add salt, pepper, chili powder, turmeric, curry powder to the fish
pieces and mix well (until all the pieces are well coated).
- Drain the goraka pieces and crush into a coarse paste.
- Mix the paste with the drained water and add to the fish, mix well.
- Arrange the fish in a shallow pan and pour the liquid over the pices.
- Wash the mixing bowl with 1 cup water and pour over the fish.
- Swirl the pan to coat the pieces with the liquid.
- Add the curry leaves, rampe, cinnamon & crushed garlic.
- Cook over slow heat until the fish is done.
- For a completely dry dish, transfer the fish and thick gravy into an
oven proof container and leave it in a warm oven until completly dry.

CHICKEN AND PINEAPPLE CURRY

INGREDIENTS
25 gm ghee or butter
500 gm chicken cut as for curry
70 gm sliced onion
01 tsp lime juice
01 tsp chopped ginger
01 tsp chopped garlic
02 tbsp unroasted curry powder
01 tsp chillie powder
150 ml coconut water
100 ml natural or plain yogurt
75 ml thick coconut milk
150 gm semi riped pineapple cubed
01 tbsp fresh coriander leaves chopped
salt to taste

METHOD
1. Marinate the chicken with curry powder/chillie powder/lime juice/yougurt and set a side for about 30 minutes.

2. Heat the fat in a saucepan to medium heat, add the onion fry until onions are light brown.Mix in ginger and garlic cook for 1 to 2 minutes.

3. Add the marinated chicken and cook for about 5 minutes until chicken is lightly coloured.

4. Pour the coconut water and bring to the boil.Simmer for 15-20 minutes.

5. Stir in coconut milk and pineapple,cook for further 5 minutes.Finish off by adding coriander leaves and salt to taste. Serve hot.

Aggala

INGREDIENTS
kittul treacle
roasted rice flour
pepper to taste
salt to taste

METHOD
Reserve one-fourth of the roasted rice flour in a bowl to coat the aggala when ready.

In a saute pan, boil the treacle over medium heat until thickened. Add a pinch of salt and pepper. Remove from fire.

Add the roasted rice flour to the thickened treacle. Mix in well. Mixture should be a little bit sticky.

When mixture has cooled enough to handle, form into 3/4"-1" diameter balls and coat with the remaining roasted rice flour.

1 Cup thick Coconut milk or fresh milk

Method:

Place the cashews in a bowl, add boiling water, close with lid and soak for about 4 hours or overnight.
Drain the water from cashews and add salt, turmeric, raw curry powder, goraka and mix well until cashews are well coated.
Heat the oil in a medium saucepan then add onions, green chilies, crushed garlic, cinnamon and fry until onions are soft and golden brown.
Add the cashews and keep stirring until well coated with oil and onions.
Add thin coconut milk (or water), close with lid and cook on slow heat until cashews are soft and cooked.
Add the thick coconut milk (or fresh milk) and bring to a boil on slow heat.
Turn off heat. Adjust salt to taste.

Caramel Pudding

INGREDIENTS
2 number egg
1 and 1/2 cup Milk
18 tsp sugar
4 drops vanilla essence

METHOD
1. Beat egg and mix it with milk.
2. add vanilla essence and 8 tsp of sugar to it.
3. For caramel - In a steel vessel (make sure that vessel will fit into pressure cooker), put 10 tsp sugar and heat it on medium flame. Once sager starts melting, spread it all over the vessel. wait till sager turns little brownish in color. Remove the vessel from stove.
4. Now in this vessel add your egg mixture. Pressure cook this till 3 whistles.
5. Let it cool down a little bit, then put it in fridge.

Basic Cake

1/2 cup Butter
1 1/4 cup All-Purpose Flour
1 tsp Baking Powder
2 number Eggs
1 tsp Pure Vanilla

1. Mix butter and sugar. Add vanilla and eggs; mix well.
2. Add flour and baking powder; mix well.
3. Bake in 350 degree oven approximately 25 minutes (8x8 pan).

ALA DOSI


INGREDIENTS

1 1/2 cups Sugar
1 1/2 cups Milk
1 x 410g can sweetened condensed Milk
125g butter
1 cup cooked mashed Potato
1 cup finely chopped Cashew nuts
2 tbs. rose water
1 tsp. ground Cardamom

METHOD:

Put sugar, milk, condensed milk and butter into a large heavy saucepan.
Cook over medium heat, stirring constantly until mixture reaches soft-ball stage (To test for soft-ball stage, drop a little into a cup of ice cold water.

If it is firm enough to be molded into a soft ball then it has reached the required temp. of 116 degrees Celsius).
Remove from heat, add smoothly mashed potato and beat with a rotary beater until all lumps are beaten out.
Return to heat and cook to soft-ball stage once more.
Remove from heat, stir in nuts, rose water and cardamom & mix well.
Pour into a well buttered shallow dish or baking tin.
Press lightly with a piece of buttered banana leaf or aluminum foil to smoothen and flatten the surface.
Allow to cool and set, then cut into diamond shapes.

TUNA CURRY



INGREDIENTS:

1 tin Tuna (drained)
1 small Onion
1 small Tomato
1 small Green Chili
3 tablespoons of Vegetable Oil
1 tbs. Chili Powder (adjust to taste)
½ tsp. Salt (adjust to taste)
1 tsp. Sugar
1 tbs. Lemon juice


METHOD:

- Heat the oil in a frying pan.
- Add the Tuna carefully without getting it spattered
- Add the chili powder, salt and mix well.
- Stir the tuna regularly until well fried (aprx. 5 min.)
- Add the tomato, chili, onion, sugar and lemon juice.
- Keep stirring the mix until the onions soften and the
mix is well cooked.
- Taste great with bread or rice.

1lb Tuna (or Shark, Red Mullet)
4 tablspn Red pepper powder
2 tblspoons unroasted curry powder
1tablspn black pepper
4 cups water
2 tablspns vinegar
to taste Salt
1 clove garlic

Wash fish and cut into cubes. Add vinegar and salt and knead into the
fish. Then mix in red pepper powder, curry powder, black pepper and garlic

Peanut Toffee

Ingredients:

Peanuts 08 oz.
Sugar 06 oz.
Astra Margarine 02 oz.
Treacle 01 tbsp.
Vinegar 1 1/2 tbsp.
Golden Syrup 08 oz.

Directions:

Skin Peanuts and warm the Peanuts. Spread all over a greased tin about 1” deep.
Boil Sugar, Golden Syrup, Treacle, Vinegar & Astra Margarine together till it becomes thick.
Pour this mixture over the Peanuts which is in the greased tin. When it slightly hardens mark it with a knife. When cool break into pieces.

Potatoes - 2 medium (300 g), boiled and shredded
Mixed Vegetables - 2 cups (250 g) - peas, carrots, green beans, corn, etc
Paneer - 3-4oz (100 g)
Onions - 1/4 medium (75 g), chopped very fine
Green Chilies - to taste, finely chopped
Cilantro (Coriander leaves) - 10 sprigs, finely chopped
Dried Apricots - 2, chopped finely
Assorted Nuts - 1 heaping Tbsp (example: walnuts, pine nuts, peanuts, etc)
Salt - to taste
Chaat Masala - 1 tsp
Dried Mango Powder (Amchur) - 1 tsp
Red Chili Powder - 1/2 tsp or to taste
Roasted Cumin Powder - 1/2 tsp
Bread Crumbs - for coating
Oil - for pan frying

Method:
1. Put the Mixed Vegetables in a food processor and pulse them so as to not make a paste.
2. Pour into a bowl.
3. Do the same with the Paneer and pour into a bowl.
4. Into the bowl, add in Potatoes, Onions, Green Chillies, Cilantro, Mixed Nuts and Dried Apricots.
5. Mix gently but well.
6. Add in the dry spices: Salt, Chaat Masala, Dry Mango Powder, Roasted Cumin Powder and Red Chilli Powder.
7. Again mix well but gently.
8. Heat Tawa/skillet and drizzle a little Oil on it.
9. Meanwhile, put the bread crumbs in a plate.
10. Make cutlets to the size desired, roll in the crumbs and coat well with the bread crumbs.
11. Place on the skillet once the oil is hot.
12. Allow the Cutlets to get golden brown on the bottom side.
13. Drizzle a little Oil on the top side of the Cutlets before flipping them over.
14. Allow the other side to get brown as well.
15. Take off the Tawa and serve hot with some chutney or ketchup.

Tips:
1. Mix the Salt into the mixture when you are ready to make the Cutlets. Salt always tends to make the vegetables sweat and then it will be difficult to form the cutlets.
2. Make the Cutlets and semi-cook them (without Oil) and then freeze them. When ready to eat, semi-thaw and cook with oil. Gives a freash taste and you instantly have snacks or patties.

Dates - 20 (5oz or 150g)
Water - approx 1/2 cup, for soaking
Walnuts - 1/4 cup (30 g), chopped
Sweetened Condensed Milk - 14oz can (396g)
Unsalted Butter - 1 stick (4oz or 113g)
Baking Soda - 1 1/2 tsp
Baking Powder - 1 tsp
All-purpose Flour - 1 1/4 cups (183 g)

Method:
1. Soak the Dates in warm water for about 30 minutes just to soften them.
2. Sift the All Purpose Flour along with the Baking Powder and the Baking Soda.
3. Press down on any lumps.
4. Make a paste of the Dates using as little water as possible either in a blender or a food processor.
5. Melt the butter so it is soft and mix it to the dry ingredients (flour, baking soda & baking powder).
6. Mix in the Dates paste and the Sweetened Condensed Milk. Mix well.
7. Fold in the Walnuts as well.
8. Spray/Grease a baking pan and pour the batter into it.
9. Bake in a pre-heated oven (180 degrees C/350 degrees F) for 40 minutes in the center of the oven.
10. Once done, take the cake out and allow it to stand for 5 minutes before taking it out of the pan.
11. Loosen the edges and flip the cake onto a cooling rack.
12. Serve hot or cold.
Annam’s tips:
1. Replace the dates with fruit - pineapples (sounds good)!
2. If you are planning to frost the cake, allow it to cool all the way thru.
3.When the oven door is open in-between according to the temperature some oven will need 50min to bake.
4. When too much water is added to dates while grinding,ihe cake tends to sink.

Ingredients:
Mango Pulp - 30 oz can
Sweetened Condensed Milk - 14 oz can
Whipped Topping - 8 oz container
Fresh Mango - cubed, optional

Method:
1. In a big bowl pour in the Mango Pulp, Condensed Milk and the Whipped Topping.
2. Fold them in very well but very gently.
3. Pour into a dish with a tight fitting lid.
4. Cover and place in the freezer for 2 hours.
5. After 2 hours, mix in the cubed Mango pieces and return dish to the freezer.
6. Allow it to freeze for another 3 hours or so.
7. Serve and enjoy!
Tips:
1. Fresh Mango plup can be substituted for the can.
2. Add in Tutti-fruiti, nuts, saffron or cubes of cake for a variation.
3. Great make-ahead dessert.

Ingredients (serves 4)

500g lean beef mince
1 egg, lightly beaten
1 cup grated tasty cheese
1 onion, finely chopped
1/4 cup chopped basil
1 tbs olive oil
570g jar tomato, onion & basil chunky sauce
400g dried spaghetti
Basil leaves to serve Method

Combine mince, egg, cheese, onion and basil. Season and roll into balls.
Heat oil in a large non-stick frying pan. Cook half the meatballs for 4-5 minutes. Remove and repeat.
Return the meatballs to the pan and pour over sauce. Cover, cook over a medium heat for 20 minutes until cooked through.
Cook spaghetti in a large pan of boiling water, as per packet directions. Drain and place in bowl. Spoon over meatballs and sauce. Serve with basil leaves. wadeta 30 min yanne...........:yes::yes:

Method:
1. In a double boiler, melt chocolate.
2. In a medium mixing bowl, beat Eggs and Sugar until light and fluffy.
3. Once chocolate is melted, remove pan from heat and add in butter. Mix until the butter melts fully.
4. Add chocolate/butter mixture into the eggs, add all-purpose flour and mix until well incorporated.
5. Butter bottom and sides of ramekins (small glass/porcelain bowls) and pour in mixture about 3/4 way full.
6. Place ramekins on a baking tray and bake at 350 degrees Fahrenheit (180 C) for 10 - 15 minutes. Shorter for gooey (molten) inside, longer for stiff inside.
7. Serve hot with vanilla ice cream.

2 cups coarsely chopped pecans 500 mL
Preheat oven to 350º F (180º C).

Base: In a medium bowl, combine flour and granulated sugar; cut in Imperial Hard Margarine with pastry blender until coarse crumbs are formed. Press well into the bottom of a greased 9-inch (2 L) square pan. Bake in preheated oven for 15 minutes. Let cool 10 minutes.

Ala Dosi - Potato Sweets

Ingredients:
1 1/2 cups Sugar
1 1/2 cups Milk
1 x 410g can sweetened condensed Milk
125g butter
1 cup cooked mashed Potato
1 cup finely chopped Cashew nuts
2 tbs. rose water
1 tsp. ground Cardamom

METHOD: Put sugar, milk, condensed milk and butter into a large heavy saucepan. Cook over medium heat, stirring constantly until mixture reaches soft-ball stage (To test for soft-ball stage, drop a little into a cup of ice cold water. If it is firm enough to be molded into a soft ball then it has reached the required temp. of 116 degrees Celsius). Remove from heat, add smoothly mashed potato and beat with a rotary beater until all lumps are beaten out. Return to heat and cook to soft-ball stage once more. Remove from heat, stir in nuts, rose water and cardamom & mix well. Pour into a well buttered shallow dish or baking tin. Press lightly with a piece of buttered banana leaf or aluminum foil to smoothen and flatten the surface. Allow to cool and set, then cut into diamond shape.

SINHALA ACHCHARU - Sinhalese vegitable Pickle

Ingredients:
15-20 small Onions (pearl or red onions)
10-15 small green Chilies (each split into two halves)
2 large Carrots (cut into thin strips)
1 small Turnip (cut into thin trianguler shaped pieces)
15-20 small Cauliflower florets (optional)
2 cups Vinegar (Coconut vinegar if available would be ideal)
1 inch piece Ginger root (crushed)
6 cloves Garlic (crushed)
2 tbs black ground Mustard seed
1 tbs black ground Pepper
pich of Turmeric
Salt to taste

METHOD: Heat 1 cup vinegar in a saucepan. Add onions and simmer for few minutes. Drain the onions and set aside in a large mixing bowl. Add green chilies to hot vinegar and simmer for few minutes. Drain the chilies and add to the onions. Repeat same process with carrots & cauliflower and add to the onions and chillie. Do not heat the turnip but add to the onion mix once cut into pieces. Mix all the vegetables well. To the heated vinegar in the saucepan, add the remaining 1 cup of vinegar and all other ingredients and boil for few minutes. Pour the hot vinegar mix over the onions and vegetables and mix well. Pack into a bottle and leave for a day or two to mature.

INGREDIENTS:
1 medium ripped mango
2 teaspoons minced garlic
2 teaspoons minced ginger
1 onion (sliced)
salt – to taste
1 teaspoon chilli powder
½ teaspoon turmeric
2 teaspoons curry powder
6 curry leaves
1 x 2.5cm cinnamon stick
2 cups coconut milk
3 tablespoons vegetable oil
4 tablespoons suger

DIRECTIONS:
Wash the mango & cut it into pieces with the seed. Now in a large bowl mix all the spices with mango pieces (mango, salt, Sri Lankan curry powder, chilli powder & turmeric) and keep it in aside.
Heat the oil in a medium saucepan, add ginger & garlic and fry it for 1 minute, then add curry leaves, cinnamon stick & onions and cook it for nearly 5 minutes.
When onions are cooked, add the mango pieces into the onion mixer and mix it well & keep it for nearly 10 minutes in medium heat.
Final step is adding the coconut milk, and stir the curry. Keep it on heat till the mango pieces are getting soft, but do not try to break the pieces. (Try to stir the curry without a spoon, shake the saucepan.)
Taste for salt.

Onion Soup

Astra Margarine 1 1/2 tbsp.
Flour 02 tbsp.
Bombay / Red Onions sliced 250-300 g
Milk 01 cup
Stock 2-3 cups
Pepper ½ tsp.
Salt to taste

Method:
Heat ¾ tbsp. Astra Margarine. Add chopped Onions & fry for 02 minutes. Add 01 cup Stock and cook for 5 minutes. Drain. Blend half of the Onions with stock using a blender.

Heat ¾ tbsp. Astra Margarine. Add Flour and cook for 02 minutes. Add Onion mixture and cook again for 03 minutes. Add Milk, Salt & Pepper. Garnish with fried Onions and Parsley.

Directions:
Season the Chicken and Prawns with Salt, Pepper, Cornflour and one Egg. Deep fry and leave to drain. Heat a wok and add Astra Cook n' Fry. Add Ginger, the balance Eggs and all the other ingredients including the Rice, Prawns and Chicken. Garnish with Tomato and Parsley.

Savoury Rice Noodles


Ingredients:

3.75G white onion
4.small bag of dwarf carrots

Method:

Beef Curry


Ingredients:

3 lb Stewing beef (cut into pieces)
3-4 tbs. Vinegar
6 cloves Garlic & 1 inch Ginger root - crushed together

1 cup thick Coconut milk or fresh milk

Directions:

Heat the oil in a saucepan.

Add tomato paste (or sauce) and stir until all pieces are well coated (If the curry is too dry and tend to stick to the saucepan, add 1-2 cups water & stir).
Close with a lid and allow the beef to cook on slow heat.
Add the thick coconut milk (or fresh milk) and bring to a boil without covering.
Taste and adjust salt.

Roasted Chili Paste

Thailand

Nahm prik pao, or "roasted chili paste," is a rustic, spectacularly tasty condiment made from easy-to-find ingredients. The trick to this simple recipe is to keep the herbs on the pleasing side of burnt, while allowing them to blossom into the robust, charred concoction beloved by Thais. Traditionally this preparation is made by roasting the chilies, shallots, and garlic in or over the feisty coals of charcoal stoves used in upcountry kitchens. If you have a lively bed of coals or a good grill, roast or grill the chilies, shallots, and garlic to a handsome darkness, turning with tongs or chopsticks before they incinerate. Use the chili paste in Tome Yum Soup with Mushrooms and Tofu, Zucchini and Tofu in Roasted Chili Paste, and Crispy Rice Cakes with Roasted Chili Paste.


1/2 cup small dried red chilies such as chiles de Arbol
or chiles japones (about 32), stemmed, halved crosswise
and loosely packed, about 1/2 ounce
A generous 1/2 cup unpeeled shallots, cut lengthwise
into chunks, about 3 ounces
1/4 cup unpeeled garlic cloves (8 to 10 large cloves), about 1-1/2 ounces
1/2 cup vegetable oil
3 tablespoons palm sugar or brown sugar
3 tablespoons Tamarind Liquid (http://www.globalgourmet.com/food/egg/egg1097/chilipaste.html#tamarind)
1 tablespoon soy sauce
1 teaspoon salt

In a wok or a small, heavy skillet, dry-fry the chilies over medium-low heat until they darken and become fragrant and brittle, 3 to 5 minutes. Shake the pan and stir frequently as they roast. Remove from the heat and transfer to a plate to cool.
Increase the heat to medium and dry-fry the shallots and garlic, turning them occasionally, until they are softened, wilted, and blistered, about 8 minutes. Remove from the heat and transfer to the plate to cool.
Stem the chilies and shake out and discard most of the seeds. Crumble the chilies into small pieces. Trim the shallots and garlic, discarding the peel and root ends, and chop coarsely. Combine the chilies, shallots, and garlic in a mini processor or blender and pulse to a coarse paste, stopping to scrape down the sides as needed. Add 1/4 cup of the vegetable oil and grind to a fairly smooth paste. Transfer to a small bowl and set aside.
Pour the remaining 1/4 cup oil into the wok or a skillet. Place over medium heat until a bit of the paste added to the pan sizzles at once, about 1 minute. Add the ground chili paste and cook, stirring occasionally, until the paste gradually darkens and releases a rich fragrance, about 5 minutes. Remove from the heat and set aside to cool to room temperature.
Combine the sugar, tamarind, soy sauce, and salt in a small bowl and stir well. Add this mixture to the cooled chili paste and stir to combine. The paste will be quite oily, and must be well stirred before each use. Transfer to a jar, cap tightly, and refrigerate for up to 1 month. Use at room temperature in recipes or as a condiment.
Makes about 1-1/4 cups.
Note: If you have a heavy mortar and pestle, you can bring this sauce together in the traditional way. Coarsely chop the roasted chilies, shallots, and garlic and place in tile mortar Using the pestle, grind and pound them to a coarse mush, using a spoon to scrape down the sides of the mortar, as you work. Add a little of the oil and continue pounding and grinding to smooth out the mixture until you have a fairly smooth paste. Continue as directed, frying the paste in the oil and then seasoning it with the sugar, tamarind, soy sauce, and salt.
This sauce has two incarnations, one as a pure chili-shallot-garlic paste roasted in oil, and the other as a rich, tangy chili-tamarind paste softened by palm sugar's voluptuous kiss. You can stop after frying the paste and have the former, or complete the recipe and have the latter. Either will work in recipes in which nahm prik pao is used. You can purchase this condiment in Southeast Asian grocery stores, but check the ingredients list. In its traditional form, the seasonings added after frying include fish sauce and dried shrimp. If you adore fiery food, add more chilies up to 1/2 cup. If you want to cut the heat, you can reduce the amount of chilies to about 2 tablespoons coursely chopped chilies, about 1/4 ounce. Handle tile chilies with care, avoiding touching your eyes and other tender areas for a few hours after handling them. When you are roasting the chilies, the fragrant smoke from file pan may make you cough a little.
Tamarind Liquid



1/2 cup tamarind pulp
1 cup warm water

Place the sticky, gooey tamarind pulp in a small bowl and add the warm water. Let stand for 20 to 30 minutes, poking and mashing occasionally with your fingers or a spoon to break the sticky lump into pieces and help it dissolve.
Pour the tamarind pulp and water through a fine-mesh sieve into another bowl. Use your fingers or the back of a spoon to work the tamarind pulp well, pressing the softened pulp against the sieve to extract as much thick brown liquid as you can. Scrape the outside of the sieve often to capture the thick purée that accumulates there. Discard the pulp, fibers, and seeds that have collected in the sieve and thin the tamarind liquid with water as needed until it is about the consistency of pea soup or softly whipped cream.
Use as directed in recipes, or seal airtight and refrigerate for up to 3 days. It sours and sharpens as it stands, so if it has stood for several days, taste it and adjust the flavor with some sugar.
Makes About 1 Cup
